Launched in January 2022 under the ‘Sud de France’ label, the “L'Atypique” baguette is made using durum wheat flour and liquid durum wheat sourdough. In addition to its unique gustatory signature, the use of durum wheat (both in the flour and in the liquid sourdough) gives the baguette a hydrated dough, a well-developed honeycomb structure and ensures that the bread keeps well.
